A Los Angeles Native with a Central Coast Heart

Nick Nolan’s culinary journey is one that blends rich experiences, diverse cultures, and a deep passion for the finest ingredients. Born and raised in Los Angeles, Nick’s early career was shaped by the vibrant food scene of Southern California. However, it was on the Central Coast, where he has been crafting exceptional dining experiences for over a decade, that he truly found his culinary heart.

Culinary Training and Global Inspirations

  • With a Culinary degree from Santa Barbara City College, Nick honed his skills in some of Los Angeles' most dynamic kitchens. But his love for cooking took him beyond California’s borders. Running kitchens in Australia offered Nick a fresh perspective on global cuisine, allowing him to blend different culinary traditions with his own style. This international experience added layers of depth to his cooking, but his true passion remained rooted in California's fresh, local ingredients.

Learning from a Pioneer: Chris Kobayashi’s Influence

  • One of the most pivotal moments in Nick's career came when he began working under the tutelage of Chris Kobayashi at Artisan in Paso Robles. Kobayashi is a highly respected chef and restaurateur, known for his pioneering work in the Farm to Table movement. His commitment to sustainability and his reverence for local, seasonal ingredients set a new standard in California cuisine.

  • At Artisan, Nick learned the art of sourcing the best local fare and turning it into elevated dishes that reflect both the land and the community. Chris Kobayashi’s influence went beyond teaching technical skills—it instilled in Nick a deep understanding of the relationship between food, the environment, and the people who produce it. This mentorship laid the foundation for Nick’s own culinary philosophy and inspired him to carry forward the principles of the Farm to Table movement.

A Passion for Classic California Cuisine

  • Inspired by his time at Artisan, Nick ventured out on his own, bringing his refined techniques and passion for quality ingredients to the catering world. Today, as the chef and co-owner of Society Cuisine, Nick is dedicated to offering a dining experience that is both luxurious and grounded in the authenticity of California’s culinary heritage. Whether it's a farm-fresh salad or a perfectly braised short rib, each dish is a testament to Nick’s commitment to excellence and his love for the Central Coast.

Life in Paso Robles: Family, Food, and Fun

  • Nick now resides in Paso Robles with his wife, Erica, who is also his business partner at Society Cuisine. Together, they have built a catering company that reflects their love for the Central Coast and their dedication to creating unforgettable dining experiences. When he’s not crafting exceptional meals, Nick enjoys snowboarding, traveling, and spending quality time with his family and his loyal dog, Kingsley.

  • Through Society Cuisine, Nick Nolan continues to create culinary experiences that are both elevated and approachable, rooted in the best of California's culinary traditions. His journey from Los Angeles to Paso Robles, shaped by global experiences and local inspirations, is what makes his cooking truly special.
